For copy data activity, I want to be able to select a source and a destination data store in a different wokspace to where my data pipeline is located.
For stored procedure activity, I want to be able to trigger a stored procedure for a data warehouse located in a different workspace.
For the Invoke Pipeline Activity, I want to be able to be able to call a Child Pipeline which is located in another workspace.

This would be really useful. We could then setup centralised places for functions to do auditing, meta data etc and call them from wherever.

This is a huge gap. Is there an ETA for this?

Absolutely need this, otherwise Data Factory is somewhat useless as an orchestration tool in real environments.
